Looked at my bank statement one day and realized how much money we spent eating out. Wow you really do not realize the total amount until you look at it all together. There is not just the cost to my wallet, but I am sure that making something at home would be healthier.
So with a busy life style and working two jobs eating out has become more of a convience then a treat. Honestly, I do not remember ever going to fast food restaurants growing up and we would did eat out it was a special occasion. Mom always made dinner for us and we sat around the table to eat.
I started looking into what would be a good way to have the home cooked meals, without needing to spend the whole evening preparing and making them. So I decided I was going to make some meals ahead of time and freeze them, this way it would eliminate the prep time needed in the evening. I looked for recipes and was very excited about this challenge. I planned to do several recipes so we had some variety. The recpes I picked for this first experience were Chicken Alfredo Sauce, Chicken Pot Pies, Chicken Fried Rice, Stuffed Jumbo Shells, Smothered Pork Chops and Snack Burritos. Yeah once I decide to do something I tend to go full force, this is why sometimes I end up spending so much time planning that I never get anything done. But not this time I set the date for the upcoming Sunday.
So I took the 2 pound bag of chicken out of my freezer to thaw and this is where my plans went astray. I had a to go to the store, there were several sales at CVS that were ending that I had coupons for and the local grocery store, Hy Vee, was having a 3 day sale ending on Saturday (which included if you spend $50 you get 10 cents off per gallon of gas). Now the thing I should have done was get my grocery list around for the freezer meals and do all the shopping at once, but sice it was my oldest daughters birthday I had agreed to watch my Granddaughter over night and she was coming over in 2 hours. Anyone who has been around a 1 1/2 year old understands that this means once she arrived the chances of me getting much done were slim.
